Broccoli and Cashew Stir-Fry

Ingredients

  • 1 (2-inch) piece fresh ginger, peeled and minced
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 lb broccoli, cut into florets
  • 2 tsp sesame oil
  • 2 Tbsp soy sauce
  • ¾ cup cashews, toasted
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Sauté ginger and garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute.
  2. Stir in broccoli and sesame oil; sauté 5 minutes or until broccoli is crisp-tender. Add soy sauce, and toss well; stir in cashews.
  3. Serve stir-fry over hot soba noodles; top with cilantro just before serving.

  • 1 (8-oz) pkg uncooked soba noodles
  • 2 green onions, chopped

Side Dish Instructions

  1. Cook soba noodles according to package directions. Toss with green onions.
