Broccoli and Cashew Stir-Fry
Hot Soba Noodles
Ingredients
- 1 (2-inch) piece fresh ginger, peeled and minced
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 lb broccoli, cut into florets
- 2 tsp sesame oil
- 2 Tbsp soy sauce
- ¾ cup cashews, toasted
- 2 Tbsp chopped fresh cilantro
Instructions
- Sauté ginger and garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute.
- Stir in broccoli and sesame oil; sauté 5 minutes or until broccoli is crisp-tender. Add soy sauce, and toss well; stir in cashews.
- Serve stir-fry over hot soba noodles; top with cilantro just before serving.

- 1 (8-oz) pkg uncooked soba noodles
- 2 green onions, chopped
Side Dish Instructions
- Cook soba noodles according to package directions. Toss with green onions.
