Bacon, Mushroom and Tomato Crustless Quiche

Ingredients

  • 8 slices center-cut bacon
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1 (8-oz) pkg sliced mushrooms
  • 2 Roma tomatoes, thinly sliced
  • 8 large eggs
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 375°F. Cook bacon in a large nonstick skillet over medium-high heat until crisp; drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
  2. Add onion and garlic to hot drippings; cook 3 to 5 minutes or until tender. Add mushrooms; cook 8 to 10 minutes or until browned.
  3. Spread mushroom mixture and tomatoes in a 9-inch pie plate coated with cooking spray.
  4. Whisk together eggs, mustard, salt and pepper. Pour into pie plate. Sprinkle with bacon. Place on a rimmed baking sheet.
  5. Bake 30 to 35 minutes or until center is set. Let stand 5 minutes before cutting into wedges.
