Bacon, Mushroom and Tomato Crustless Quiche
Ingredients
- 8 slices center-cut bacon
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 (8-oz) pkg sliced mushrooms
- 2 Roma tomatoes, thinly sliced
- 8 large eggs
- 1 Tbsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 375°F. Cook bacon in a large nonstick skillet over medium-high heat until crisp; drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
- Add onion and garlic to hot drippings; cook 3 to 5 minutes or until tender. Add mushrooms; cook 8 to 10 minutes or until browned.
- Spread mushroom mixture and tomatoes in a 9-inch pie plate coated with cooking spray.
- Whisk together eggs, mustard, salt and pepper. Pour into pie plate. Sprinkle with bacon. Place on a rimmed baking sheet.
- Bake 30 to 35 minutes or until center is set. Let stand 5 minutes before cutting into wedges.
