Caribbean Fish with Cilantro-Ginger Oil

Ingredients

  • 1 Tbsp salt-free Jamaican Jerk seasoning (such as Spice Hunter)
  • 2 (6-oz) tilapia fillets
  • 1½ Tbsp extra virgin olive oil
  • 2 Tbsp chopped fresh cilantro
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • ¼ tsp garlic powder

Instructions

  1. Preheat oven to 400°F. Rub jerk seasoning over both sides of fish. Place on a baking sheet.
  2. Bake 12 minutes or until fish flakes easily with a fork.
  3. Stir together oil, cilantro, ginger, salt, and garlic powder in a bowl; spoon over fish.

  • ¼ lb snow peas, trimmed
  • 1 carrot, grated
  • 2 tsp chopped fresh cilantro
  • 1 tsp olive oil
  • ½ tsp rice vinegar
  • 1 small clove garlic, minced
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Combine snow peas, carrot, and cilantro in a medium-size bowl.
  2. Whisk together oil, vinegar, garlic, salt, and pepper; toss with snow pea mixture.
