Caribbean Fish with Cilantro-Ginger Oil
Snow Pea-Carrot Salad
Ingredients
- 1 Tbsp salt-free Jamaican Jerk seasoning (such as Spice Hunter)
- 2 (6-oz) tilapia fillets
- 1½ Tbsp extra virgin olive oil
- 2 Tbsp chopped fresh cilantro
- ¼ tsp ground ginger
- ¼ tsp salt
- ¼ tsp garlic powder
Instructions
- Preheat oven to 400°F. Rub jerk seasoning over both sides of fish. Place on a baking sheet.
- Bake 12 minutes or until fish flakes easily with a fork.
- Stir together oil, cilantro, ginger, salt, and garlic powder in a bowl; spoon over fish.

- ¼ lb snow peas, trimmed
- 1 carrot, grated
- 2 tsp chopped fresh cilantro
- 1 tsp olive oil
- ½ tsp rice vinegar
- 1 small clove garlic, minced
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Combine snow peas, carrot, and cilantro in a medium-size bowl.
- Whisk together oil, vinegar, garlic, salt, and pepper; toss with snow pea mixture.
