Orange-Rosemary Chicken
Roasted Cauliflower and Creamed Spinach with Tomatoes
Ingredients
- 3 bone-in, skin-on chicken breasts
- 2 tsp orange zest
- 3 Tbsp fresh orange juice
- 1½ Tbsp finely chopped fresh rosemary (or use 2 tsp dried crushed rosemary)
- ½ tsp kosher salt
- ¼ tsp pepper
- 2 cloves garlic, minced
Instructions
- Preheat oven to 425°F. Place chicken on a rimmed baking sheet.
- Combine orange zest, orange juice, rosemary, salt, pepper, and garlic; drizzle over chicken, and rub into meat.
- Bake 45 minutes or until done.

- 1 (12-oz) pkg cauliflower florets
- 2 Tbsp olive oil, divided
- ½ tsp pepper, divided
- ¼ tsp salt, divided
- 1 clove garlic, minced
- 1 (10-oz) pkg baby spinach
- 1 Roma tomato, chopped
- ½ Tbsp fresh lemon juice
- 2 oz cream cheese, cut into small pieces
Side Dish Instructions
- Preheat oven to 425°F. Combine cauliflower, 1 Tbsp oil, ¼ tsp pepper, and ⅛ tsp salt on a greased rimmed baking sheet. Bake 15 to 20 minutes or until browned and tender.
- Meanwhile, heat 1 Tbsp oil in a large nonstick skillet over medium heat; add garlic. Sauté 1 minute or until tender. Add spinach and cook 3 to 5 minutes or until wilted; stir in tomato.
- Add lemon juice, cream cheese, ¼ tsp pepper, and ⅛ tsp salt; stir until thoroughly combined and creamy.
