Ingredients

  • 1 (10-oz) pkg frozen microwavable brown rice
  • ¼ tsp chili powder
  • ¼ tsp ground cumin
  • ¼ tsp salt
  • 2 cups shredded romaine lettuce
  • 1 cup shredded rotisserie chicken breast, skin removed
  • 1 cup shredded reduced-fat Cheddar cheese
  • ½ cup refrigerated salsa
  • 1 avocado, sliced
  • ¼ cup reduced-fat sour cream

Instructions

  1. Cook rice according to package directions.
  2. Combine cooked rice, chili powder, cumin, and salt.
  3. Divide lettuce among 4 serving bowls; top with rice mixture, chicken, cheese, salsa, avocado, and sour cream.
