One Dish Dinner
Chunky Cheddar Potato Soup

Ingredients
- 10 slices bacon, chopped
- ¼ cup butter
- 3 cloves garlic, minced
- ¼ cup all-purpose flour
- 2 (32-oz) cartons chicken broth
- 1 (5-lb) bag potatoes, peeled and cut into 1-inch pieces
- 1 cup milk
- 2 cups shredded Cheddar cheese
- 1 (8-oz) carton sour cream
- 1 tsp salt
- 1 tsp pepper
Instructions
- Cook bacon in a Dutch oven over medium heat until crisp. Drain on paper towels.
- Add butter and garlic to pot; cook over medium heat 1 minute.
- Add flour, and cook, stirring constantly, 2 minutes. Gradually stir in broth.
- Add potatoes; bring to a boil, reduce heat, and simmer 10 minutes or until potatoes are tender.
- Using a potato masher, mash potatoes to desired consistency. Stir in milk. Add 2 cups cheese, stirring until melted.
- Stir in sour cream, salt, and pepper; cook just until thoroughly heated. Top with bacon and additional cheese and sour cream.
