Chunky Cheddar Potato Soup

Ingredients

  • 10 slices bacon, chopped
  • ¼ cup butter
  • 3 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 2 (32-oz) cartons chicken broth
  • 1 (5-lb) bag potatoes, peeled and cut into 1-inch pieces
  • 1 cup milk
  • 2 cups shredded Cheddar cheese
  • 1 (8-oz) carton sour cream
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Cook bacon in a Dutch oven over medium heat until crisp. Drain on paper towels.
  2. Add butter and garlic to pot; cook over medium heat 1 minute.
  3. Add flour, and cook, stirring constantly, 2 minutes. Gradually stir in broth.
  4. Add potatoes; bring to a boil, reduce heat, and simmer 10 minutes or until potatoes are tender.
  5. Using a potato masher, mash potatoes to desired consistency. Stir in milk. Add 2 cups cheese, stirring until melted.
  6. Stir in sour cream, salt, and pepper; cook just until thoroughly heated. Top with bacon and additional cheese and sour cream.
