Salisbury Steak Meatballs

Mashed Cauliflower and Balsamic Green Beans

Ingredients

  • ¾ lb lean ground beef
  • ¼ cup panko breadcrumbs (preferably whole wheat)
  • 1 egg yolk
  • 1 Tbsp organic ketchup (such as Tessemae's)
  • ½ Tbsp Dijon mustard
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ½ onion, halved and thinly sliced
  • ¾ cup low-sodium beef broth
  • ½ Tbsp Worcestershire sauce
  • 1½ Tbsp arrowroot

Instructions

  1. Combine beef, panko, egg, ketchup, mustard, garlic, and ⅛ tsp each salt and pepper; shape into 2-inch meatballs.
  2. Brown meatballs in ½ Tbsp hot oil in a large skillet on all sides, about 5 minutes. Remove meatballs from skillet; add ½ Tbsp oil to drippings in skillet.
  3. Add onion, and cook 6 minutes or until tender; stir together broth, Worcestershire sauce, and arrowroot.
  4. Add to onion in skillet, and simmer 2 minutes or until sauce is thickened. Return meatballs to skillet, and cook 2 minutes or until done.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen mashed cauliflower with olive oil and sea salt (such as Green Giant)
  • 1 clove garlic, minced
  • ½ lb green beans, trimmed
  • 1 Tbsp olive oil
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp balsamic vinegar

Side Dish Instructions

  1. Cook mashed cauliflower according to package directions.
  2. Sauté garlic and green beans in hot oil in a skillet 2 minutes or until green beans begin to brown; add broth.
  3. Cover and cook 3 minutes or until green beans are tender; uncover and add vinegar. Cook 2 minutes or until liquid is reduced and slightly thickened.
