Salisbury Steak Meatballs
Mashed Cauliflower and Balsamic Green BeansIngredients
- ¾ lb lean ground beef
- ¼ cup panko breadcrumbs (preferably whole wheat)
- 1 egg yolk
- 1 Tbsp organic ketchup (such as Tessemae's)
- ½ Tbsp Dijon mustard
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ½ onion, halved and thinly sliced
- ¾ cup low-sodium beef broth
- ½ Tbsp Worcestershire sauce
- 1½ Tbsp arrowroot
Instructions
- Combine beef, panko, egg, ketchup, mustard, garlic, and ⅛ tsp each salt and pepper; shape into 2-inch meatballs.
- Brown meatballs in ½ Tbsp hot oil in a large skillet on all sides, about 5 minutes. Remove meatballs from skillet; add ½ Tbsp oil to drippings in skillet.
- Add onion, and cook 6 minutes or until tender; stir together broth, Worcestershire sauce, and arrowroot.
- Add to onion in skillet, and simmer 2 minutes or until sauce is thickened. Return meatballs to skillet, and cook 2 minutes or until done.
Side Dish Ingredients
- 1 (20-oz) pkg frozen mashed cauliflower with olive oil and sea salt (such as Green Giant)
- 1 clove garlic, minced
- ½ lb green beans, trimmed
- 1 Tbsp olive oil
- ¼ cup low-sodium chicken broth
- 1 Tbsp balsamic vinegar
Side Dish Instructions
- Cook mashed cauliflower according to package directions.
- Sauté garlic and green beans in hot oil in a skillet 2 minutes or until green beans begin to brown; add broth.
- Cover and cook 3 minutes or until green beans are tender; uncover and add vinegar. Cook 2 minutes or until liquid is reduced and slightly thickened.
