Spaghetti Carbonara

Green Peas with Basil

Ingredients

  • ½ (16-oz) pkg whole wheat spaghetti
  • 4 slices nitrate-free bacon, chopped
  • 1 clove garlic, minced
  • 2 large eggs (see Note)
  • ½ cup freshly grated Parmesan cheese
  • ½ tsp pepper

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Meanwhile, cook bacon in a large deep skillet over medium heat 10 minutes or until crisp; drain off most of drippings. Add garlic to skillet; cook 1 minute or until tender. Add pasta to skillet, and toss. Cook 2 minutes or until very hot; set aside.
  3. Whisk together eggs and cheese in a bowl; add mixture to hot pasta and bacon. Toss mixture, and add ¼ cup hot pasta water and pepper; toss.

  • ½ onion, chopped
  • 1 Tbsp olive oil
  • ½ (16-oz) pkg frozen green peas, thawed
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp chopped fresh basil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté onion in hot oil in a saucepan over medium-high heat 5 minutes or until tender.
  2. Add peas, broth, basil, salt, and pepper; cook 5 minutes or until thoroughly heated.
