Spaghetti Carbonara
Green Peas with BasilIngredients
- ½ (16-oz) pkg whole wheat spaghetti
- 4 slices nitrate-free bacon, chopped
- 1 clove garlic, minced
- 2 large eggs (see Note)
- ½ cup freshly grated Parmesan cheese
- ½ tsp pepper
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Meanwhile, cook bacon in a large deep skillet over medium heat 10 minutes or until crisp; drain off most of drippings. Add garlic to skillet; cook 1 minute or until tender. Add pasta to skillet, and toss. Cook 2 minutes or until very hot; set aside.
- Whisk together eggs and cheese in a bowl; add mixture to hot pasta and bacon. Toss mixture, and add ¼ cup hot pasta water and pepper; toss.

- ½ onion, chopped
- 1 Tbsp olive oil
- ½ (16-oz) pkg frozen green peas, thawed
- ¼ cup low-sodium chicken broth
- 1 Tbsp chopped fresh basil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté onion in hot oil in a saucepan over medium-high heat 5 minutes or until tender.
- Add peas, broth, basil, salt, and pepper; cook 5 minutes or until thoroughly heated.
