No-Crust Sausage Quiche
Ingredients
- 1 lb Italian ground pork sausage, casings removed
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 1 cup grape tomatoes, halved
- ½ cup pitted kalamata olives, halved
- 8 large eggs
- ¼ tsp pepper
- ½ cup thinly sliced fresh basil
Instructions
- Preheat oven to 375°F. Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly.
- Add garlic, tomatoes, and olives; cook 2 to 3 minutes. Remove from heat. Spread sausage mixture in bottom of a greased 9-inch pie plate.
- Whisk together eggs and pepper. Pour over sausage mixture.
- Bake 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges; sprinkle with basil.
