Grilled Pork Chops with Creamy Avocado Sauce
Southwestern Skillet Brussels
Ingredients
- 6 (4-oz) boneless center cut pork loin chops
- 2 Tbsp olive oil
- ¾ tsp salt, divided
- ½ tsp pepper
- 2 avocados, cubed
- ¼ cup extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 2 tsp hot sauce
- 1 tsp ground cumin
- ½ cup water
Instructions
- Preheat grill to medium-high heat. Brush pork with olive oil; sprinkle with ½ tsp each salt and pepper.
- Grill, covered, 4 minutes per side or until a meat thermometer inserted reads 145°F.
- Process avocado, extra virgin olive oil, lemon juice, hot sauce, cumin, ¼ tsp salt, and water in a blender until smooth. Serve pork with avocado sauce.
Side Dish Ingredients
- 1¼ lb Brussels sprouts, trimmed
- 6 slices bacon, chopped
- 2 cloves garlic, minced
- 2 tsp Southwest seasoning (or use fajita seasoning)
- 3 Tbsps apple cider vinegar
- ¼ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Thinly slice Brussels sprouts.
- Cook bacon in a skillet over medium heat until crisp; drain, reserving 3 Tbsp drippings in skillet. Add garlic, Brussels sprouts and Southwest seasoning to skillet.
- Cook 3 minutes, stirring constantly. Add vinegar, salt, and pepper.
- Cook 5 to 7 minutes or until vinegar is evaporated and sprouts are tender. Sprinkle with bacon.
