Lettuce-Wrapped Turkey Burgers with Avocado Mayo

Ingredients

  • 1½ lb ground turkey (15% fat)
  • ¼ cup grated onion
  • ½ cup shredded sharp Cheddar cheese
  • 1 Tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1 avocado, mashed
  • 3 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 6 large romaine lettuce leaves
  • 2 Roma tomatoes, thinly sliced

Instructions

  1. Combine turkey, onion, cheese, Worcestershire sauce, garlic, salt, and pepper. Shape into 6 large patties.
  2. Cook burgers, in 2 batches, in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until no longer pink.
  3. Combine avocado, mayonnaise, and mustard. Place each burger on a lettuce leaf; top with avocado mayonnaise mixture and tomatoes.

Side Dish Ingredients

  • 1 large eggplant, cut into 2-inch strips
  • 3 Tbsp olive oil
  • 2 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 375°F. Place eggplant strips on a baking sheet. Drizzle with oil; sprinkle with garlic powder, salt, and pepper.
  2. Bake 30 minutes or until strips are crispy and browned.
