Lettuce-Wrapped Turkey Burgers with Avocado Mayo
Garlic Eggplant Oven Fries
Ingredients
- 1½ lb ground turkey (15% fat)
- ¼ cup grated onion
- ½ cup shredded sharp Cheddar cheese
- 1 Tbsp Worcestershire sauce
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1 avocado, mashed
- 3 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 6 large romaine lettuce leaves
- 2 Roma tomatoes, thinly sliced
Instructions
- Combine turkey, onion, cheese, Worcestershire sauce, garlic, salt, and pepper. Shape into 6 large patties.
- Cook burgers, in 2 batches, in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until no longer pink.
- Combine avocado, mayonnaise, and mustard. Place each burger on a lettuce leaf; top with avocado mayonnaise mixture and tomatoes.
Side Dish Ingredients
- 1 large eggplant, cut into 2-inch strips
- 3 Tbsp olive oil
- 2 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 375°F. Place eggplant strips on a baking sheet. Drizzle with oil; sprinkle with garlic powder, salt, and pepper.
- Bake 30 minutes or until strips are crispy and browned.
