Creamy Basil Chicken Salad over Greens

Ingredients

  • ¼ cup sliced almonds
  • 1 avocado, halved
  • 2 Tbsp mayonnaise 
  • 2 tsp lime juice
  • 3 Tbsp chopped fresh basil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 cups shredded rotisserie chicken
  • 1 cup cherry tomatoes, quartered
  • 1 (10-oz) pkg baby spinach
  • ¼ cup olive oil vinaigrette dressing

Instructions

  1. Toast nuts in a dry skillet over low heat 2 to 3 minutes or until fragrant.
  2. Mash avocado with a fork until chunky. Add mayonnaise, lime juice, basil, salt, and pepper. Stir well. Add chicken and tomatoes; stir well.
  3. Toss together spinach and dressing in a bowl. Spoon chicken salad over spinach; sprinkle with nuts.
