Cilantro-Lime Slaw

Ingredients

  • 2 lb ground beef
  • ½ large onion, minced
  • ⅓ cup tomato paste
  • ¼ cup almond flour
  • 3 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 1 Tbsp Southwest seasoning (or use fajita seasoning)
  • 1 tsp finely chopped jalapeño pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 425°F. Gently mix together all ingredients except oil using your hands.
  2. Place meat mixture in a 9- x 5-inch loaf pan rubbed with oil, or shape into a freeform loaf on a rack in a broiler pan rubbed with oil.
  3. Bake 55 minutes to 1 hour or until center is no longer pink and a meat thermometer reads at least 165°F.

Side Dish Ingredients

  • ½ cup pepitas (pumpkin seeds)
  • 1 (10-oz) pkg angel hair coleslaw
  • ¼ cup chopped fresh cilantro
  • ¼ cup extra virgin olive oil
  • 3 Tbsp fresh lime juice
  • ¼ tsp salt

Side Dish Instructions

  1. Toast pepitas in a dry skillet over medium heat until golden and fragrant.
  2. Toss together pepitas and all remaining ingredients in a bowl.
