Lemon Zucchini with Tomatoes

Ingredients

  • 1 cup mayonnaise
  • ½ cup freshly grated Parmesan cheese
  • ½ tsp salt 
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • 6 (4-oz) boneless, skinless chicken breasts

Instructions

  1. Preheat oven to 375°F. Mix together mayonnaise, cheese, salt, pepper, garlic powder, and Italian seasoning.
  2. Spread mixture over chicken in a lightly greased 13- x 9-inch baking dish. Bake 30 to 35 minutes or until chicken is done.

  • 4 zucchini
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced
  • 2 tsp lemon zest
  • 2 Tbsp olive oil
  • ¼ tsp salt

Side Dish Instructions

  1. Cut zucchini lengthwise into 4 pieces; cut each piece into ½-inch-thick slices.
  2. Cook zucchini, tomatoes, garlic, and lemon zest in hot oil in a large skillet over medium heat 2 minutes. Sprinkle with salt.
