Parmesan-Crusted Chicken
Lemon Zucchini with TomatoesIngredients
- 1 cup mayonnaise
- ½ cup freshly grated Parmesan cheese
- ½ tsp salt
- ½ tsp pepper
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- 6 (4-oz) boneless, skinless chicken breasts
Instructions
- Preheat oven to 375°F. Mix together mayonnaise, cheese, salt, pepper, garlic powder, and Italian seasoning.
- Spread mixture over chicken in a lightly greased 13- x 9-inch baking dish. Bake 30 to 35 minutes or until chicken is done.

- 4 zucchini
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 2 tsp lemon zest
- 2 Tbsp olive oil
- ¼ tsp salt
Side Dish Instructions
- Cut zucchini lengthwise into 4 pieces; cut each piece into ½-inch-thick slices.
- Cook zucchini, tomatoes, garlic, and lemon zest in hot oil in a large skillet over medium heat 2 minutes. Sprinkle with salt.
