Lemon-Chia Pudding with Almonds

Ingredients
- ⅓ cup chia seeds
- 1 (13.66-oz) can unsweetened coconut milk
- Stevia
- 2 Tbsp lemon juice
- 2 tsp lemon zest
- ½ tsp almond extract
- ⅛ tsp salt
- ½ cup sliced almonds
Instructions
- Combine all ingredients except nuts in a bowl. Chill overnight.
- Toast nuts in a dry skillet over medium heat 2 to 3 minutes or until fragrant.
- Divide pudding among 6 bowls; top with toasted nuts.
