Lemon-Chia Pudding with Almonds

Ingredients

  • ⅓ cup chia seeds
  • 1 (13.66-oz) can unsweetened coconut milk
  • Stevia
  • 2 Tbsp lemon juice
  • 2 tsp lemon zest
  • ½ tsp almond extract
  • ⅛ tsp salt
  • ½ cup sliced almonds

Instructions

  1. Combine all ingredients except nuts in a bowl. Chill overnight.
  2. Toast nuts in a dry skillet over medium heat 2 to 3 minutes or until fragrant.
  3. Divide pudding among 6 bowls; top with toasted nuts.
