Chicken-Grain Salad
Ingredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- 1 tsp salt
- 1 tsp pepper
- ½ tsp ground cumin
- 2 Tbsp olive oil
- 2 (8.8-oz) pouches microwavable brown rice
- 2 (5-oz) pkg arugula
- 2 cups red grapes, halved
- ⅓ cup olive oil vinaigrette
- ½ cup crumbled goat cheese
Instructions
- Rub chicken with salt, pepper, and cumin. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes or until done. Let stand 5 minutes; slice crosswise.
- Meanwhile, heat rice according to package directions. Toss warm rice with arugula, grapes, and vinaigrette.
- Place rice mixture in 6 bowls; top with chicken and cheese.
