Chicken-Grain Salad

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp ground cumin
  • 2 Tbsp olive oil
  • 2 (8.8-oz) pouches microwavable brown rice
  • 2 (5-oz) pkg arugula 
  • 2 cups red grapes, halved
  • ⅓ cup olive oil vinaigrette
  • ½ cup crumbled goat cheese

Instructions

  1. Rub chicken with salt, pepper, and cumin. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes or until done. Let stand 5 minutes; slice crosswise.
  2. Meanwhile, heat rice according to package directions. Toss warm rice with arugula, grapes, and vinaigrette.
  3. Place rice mixture in 6 bowls; top with chicken and cheese.
