Hearty Slow Cooker Roast

Broccoli Florets with Horseradish Sauce

Ingredients

  • 2 lb boneless chuck roast
  • 1 Tbsp Montreal steak seasoning
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 onions, sliced
  • 1½ cups water
  • 2 Tbsp low-sodium soy sauce

Instructions

  1. Sprinkle roast with seasoning; brown on all sides in hot oil in a large skillet over medium-high heat 10 minutes, turning occasionally. Transfer roast to a 5- or 6-quart slow cooker. Add garlic and onions.
  2. Add water and soy sauce to skillet, scraping skillet to loosen browned bits; add liquid to cooker.
  3. Cover and cook on LOW 7 to 8 hours or until roast is tender.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • ½ cup mayonnaise
  • 3 Tbsp water
  • 1 Tbsp prepared horseradish
  • 1½ tsp Dijon mustard
  • 1 Tbsp minced fresh dill (or use 1 tsp dried dill)

Side Dish Instructions

  1. Cook broccoli according to package directions; drain and place in a bowl.
  2. Meanwhile, whisk together mayonnaise, water, horseradish, mustard, and dill. Spoon sauce over broccoli.
