Skillet Sausage Casserole

Ingredients
- 1 (16-oz) pkg frozen cauliflower
- 1 lb ground pork breakfast sausage
- 1 (8-oz) block cream cheese, softened
- 1 (10-oz) can diced tomatoes with green chiles
- ¾ cup shredded Cheddar cheese
- ¼ cup chopped green onions
Instructions
- Cook cauliflower according to package directions; chop.
- Cook sausage in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
- Stir cream cheese into sausage until well blended. Add cauliflower and tomatoes.
- Cook over low heat until thoroughly heated; sprinkle with cheese and onions.
