Skillet Sausage Casserole

Ingredients

  • 1 (16-oz) pkg frozen cauliflower
  • 1 lb ground pork breakfast sausage
  • 1 (8-oz) block cream cheese, softened
  • 1 (10-oz) can diced tomatoes with green chiles
  • ¾ cup shredded Cheddar cheese
  • ¼ cup chopped green onions

Instructions

  1. Cook cauliflower according to package directions; chop.
  2. Cook sausage in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  3. Stir cream cheese into sausage until well blended. Add cauliflower and tomatoes.
  4. Cook over low heat until thoroughly heated; sprinkle with cheese and onions.
