Nutty "Granola" with Yogurt
Ingredients
- 3 Tbsp butter
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ tsp ground cinnamon
- Stevia (optional)
- 1 cup chopped walnuts
- ⅓ cup sliced almonds
- ¾ cup unsweetened shredded coconut
- 2 Tbsp flax seeds
- 2⅔ cups whole-milk plain Greek yogurt
Instructions
- Preheat oven to 350°F. Melt butter in a small bowl. Stir in vanilla, salt, cinnamon, and, if desired, stevia for sweetness.
- Combine nuts, coconut, and flax seeds in a large bowl; drizzle with butter mixture. Toss.
- Spread nut mixture on a baking sheet lined with parchment paper. Bake 10 to 12 minutes or until browned. Cool and break into small pieces.
- Serve "granola" over yogurt.
