Crispy Breadcrumb Tuna Sliders

Ingredients

  • 1 lemon
  • 4 (5-oz) cans wild-caught tuna, drained and flaked
  • 2 large eggs, lightly beaten
  • ½ cup finely chopped red bell pepper
  • 1 cup panko breadcrumbs
  • ¼ cup mayonnaise
  • ¼ cup olive oil
  • 12 slider buns
  • Ketchup
  • Mayonnaise
  • Cheddar cheese slices

Instructions

  1. Grate zest and squeeze juice from lemon. Combine lemon zest, juice, tuna, eggs, bell pepper, breadcrumbs, and ¼ cup mayonnaise in a large bowl. Shape mixture into 12 small patties.
  2. Cook patties, in 2 batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 4 minutes per side or until firm and browned.
  3. Serve on buns with ketchup, mayonnaise, and cheese.

Side Dish Ingredients

  • 1 (14-oz) pkg frozen broccoli cheese veggie tots (such as Green Giant)
  • Ketchup
  • 3 apples, sliced

Side Dish Instructions

  1. Preheat oven to 450°F. Bake tots 15 to 18 minutes. Serve with ketchup.
