Pork, Tomato, and White Bean Stew

Ingredients

  • 2 lb ground pork (or use 2 lb pork tenderloin, cubed)
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 4 cloves garlic, minced
  • 2 (15-oz) cans cannellini beans, drained and rinsed
  • 1 (28-oz) can petite diced tomatoes
  • 1 (15-oz) can tomato sauce
  • 2 cups low-sodium chicken broth
  • 2 Tbsp chili powder
  • 1 tsp Italian seasoning

Instructions

  1. If desired, break up pork into a gallon zip-top plastic bag. Add onion, celery, carrots, and garlic. Seal bag, label and freeze up to 1 month. Thaw overnight in refrigerator.
  2. Cook pork, onion, celery, carrot, and garlic in a large skillet over medium heat until pork is browned; drain. Transfer to a 4- to 6-quart slow cooker.
  3. Stir in beans and remaining ingredients; cover and cook on LOW 8 to 10 hours.
