Ingredients

  • 3 cups frozen shredded hash browns, thawed
  • ¾ cup shredded Monterey Jack cheese
  • ¾ cup shredded Cheddar cheese
  • 1 cup chopped ham
  • 1 (4-oz) can diced green chiles
  • 1 red bell pepper, chopped
  • ¼ cup sliced green onions
  • 4 large eggs
  • 1 (12-oz) can evaporated milk
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 350°F. Squeeze potatoes dry with paper towels. Arrange potatoes in a greased 11-x 7-inch baking dish. Sprinkle with cheeses, ham, green chiles, bell pepper, and onions.
  2. Stir together eggs, milk, salt, and pepper. Pour egg mixture over potatoes in dish.
  3. Bake, uncovered, 40 to 50 minutes or until browned and set. Let stand 10 minutes before serving.
