Farmer´s Casserole

Ingredients
- 3 cups frozen shredded hash browns, thawed
- ¾ cup shredded Monterey Jack cheese
- ¾ cup shredded Cheddar cheese
- 1 cup chopped ham
- 1 (4-oz) can diced green chiles
- 1 red bell pepper, chopped
- ¼ cup sliced green onions
- 4 large eggs
- 1 (12-oz) can evaporated milk
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 350°F. Squeeze potatoes dry with paper towels. Arrange potatoes in a greased 11-x 7-inch baking dish. Sprinkle with cheeses, ham, green chiles, bell pepper, and onions.
- Stir together eggs, milk, salt, and pepper. Pour egg mixture over potatoes in dish.
- Bake, uncovered, 40 to 50 minutes or until browned and set. Let stand 10 minutes before serving.
