Beef-Stuffed Cabbage Rolls

Ingredients

  • 12 large cabbage leaves
  • 2 lb ground beef
  • 3 Tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper
  • 1 (14.5-oz) can fire-roasted diced tomatoes, drained
  • ¼ cup chopped fresh parsley
  • 1 (14-oz) jar pizza sauce

Instructions

  1. Preheat oven to 350°F. Steam cabbage leaves in a steamer basket over boiling water 2 to 4 minutes or until tender.
  2. Cook beef in 1 Tbsp hot oil in a large skillet 5 minutes or until browned and crumbly; drain. Add 2 Tbsp oil, onion, garlic, salt, and pepper to skillet. Cook 4 minutes; add tomatoes, and cook 4 minutes or until onions are tender. Return beef to skillet; stir in parsley.
  3. Spoon mixture down center of each cabbage leaf. Roll up filled leaves; place, seam sides down in a lightly greased 13- x 9-inch baking dish. Drizzle with pizza sauce. Bake 30 minutes or until hot and bubbly.
