Ingredients

  • 2 (14-oz) pkg smoked sausage, cut into ¼-inch-thick slices
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 3 stalks celery, chopped
  • 4 cups chicken broth
  • 1 (28-oz) can diced tomatoes
  • 2 cups long-grain white rice
  • 1 Tbsp dried parsley
  • 2 tsp Worcestershire sauce
  • 1 tsp Cajun seasoning
  • ⅛ tsp cayenne pepper

Instructions

  1. Cook sausage in a large Dutch oven over medium-high heat until browned. Remove from pot.
  2. Add onion, green pepper, and celery to pot; cook 5 minutes or until tender. Add broth, tomatoes, rice, parsley, Worcestershire, Cajun seasoning, and cayenne pepper. Stir in sausage.
  3. Bring to a boil, cover, reduce heat, and simmer 20 minutes or until rice is tender.
