Jambalaya
Ingredients
- 2 (14-oz) pkg smoked sausage, cut into ¼-inch-thick slices
- 1 cup chopped onion
- 1 green bell pepper, chopped
- 3 stalks celery, chopped
- 4 cups chicken broth
- 1 (28-oz) can diced tomatoes
- 2 cups long-grain white rice
- 1 Tbsp dried parsley
- 2 tsp Worcestershire sauce
- 1 tsp Cajun seasoning
- ⅛ tsp cayenne pepper
Instructions
- Cook sausage in a large Dutch oven over medium-high heat until browned. Remove from pot.
- Add onion, green pepper, and celery to pot; cook 5 minutes or until tender. Add broth, tomatoes, rice, parsley, Worcestershire, Cajun seasoning, and cayenne pepper. Stir in sausage.
- Bring to a boil, cover, reduce heat, and simmer 20 minutes or until rice is tender.
