Chicken-Bacon-Ranch Casserole
Ingredients
- 10 slices bacon, chopped
- 1½ cups long-grain white rice
- 1½ lb boneless, skinless chicken breasts, cubed
- 2 Tbsp butter, melted
- 1 (1-oz) envelope Ranch dressing mix
- 2 cups chicken broth
- ½ cup heavy cream
- 1 cup shredded colby-Jack cheese
- 2 Tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 350°F. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Stir together half of bacon, rice, uncooked chicken, butter, and dressing mix in a 13- x 9-inch baking dish. Stir in broth and cream.
- Cover and bake 30 minutes. Uncover, sprinkle with cheese, and bake 20 minutes longer or until rice is tender, chicken is done, and liquid is absorbed. Sprinkle with remaining bacon and, if desired, parsley.
