Beef and Cheese Enchiladas

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 (8-oz) carton sour cream
  • 1 cup corn, drained
  • 1 (8-oz) pkg shredded Cheddar cheese, divided
  • 8 corn tortillas
  • 1 (15-oz) jar enchilada sauce

Instructions

  1. Cook beef and onion in a large skillet over medium heat until browned and crumbly; drain. Stir in sour cream, corn, and 1 cup cheese.
  2. Spoon about ½ cup beef mixture onto each tortilla.
  3. Roll tortillas and place, seam sides down, in greased 13- x 9-inch baking dish. Pour enchilada sauce over enchiladas. Sprinkle with 1 cup cheese.
  4. Bake, uncovered,  at 350°F until cheese is bubbly.
