Beef and Cheese Enchiladas
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 (8-oz) carton sour cream
- 1 cup corn, drained
- 1 (8-oz) pkg shredded Cheddar cheese, divided
- 8 corn tortillas
- 1 (15-oz) jar enchilada sauce
Instructions
- Cook beef and onion in a large skillet over medium heat until browned and crumbly; drain. Stir in sour cream, corn, and 1 cup cheese.
- Spoon about ½ cup beef mixture onto each tortilla.
- Roll tortillas and place, seam sides down, in greased 13- x 9-inch baking dish. Pour enchilada sauce over enchiladas. Sprinkle with 1 cup cheese.
- Bake, uncovered, at 350°F until cheese is bubbly.
