Beef Burrito Bowls
Ingredients
- 1½ cups long-grain white rice
- ¼ cup chopped fresh cilantro (optional)
- 2 Tbsp fresh lime juice
- 1½ lb ground beef
- 2 tsp chili powder
- 1 (15.5-oz) can black beans, drained and rinsed
- 1 (8-oz) pkg shredded Monterey Jack cheese
- 1 (8-oz) pkg shredded lettuce
- 2 tomatoes, chopped
- 1 (12-oz) pkg tortilla chips
Instructions
- Cook rice according to package directions; stir in cilantro (if using) and lime juice. Set aside.
- Cook beef in a large nonstick skillet over medium-high heat until browned and crumbly; drain and return to skillet. Stir in chili powder; season with salt and pepper to taste.
- Heat beans according to package directions. Divide rice among 6 shallow bowls. Top with beef mixture, beans, cheese, lettuce, and tomato. Serve with tortilla chips.
