Baked Lemon-Basil Cod

Ingredients

  • ½ lb cod fillets
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ lemon
  • 2 Tbsp butter, softened
  • 2 Tbsp chopped fresh basil
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400°F. Place fish in a baking dish, and sprinkle with salt and pepper. Grate zest from lemon to equal 1 tsp.
  2. Combine zest, butter, basil, and garlic. Dollop butter mixture over fish. Squeeze lemon juice over fish.
  3. Bake 10 to 12 minutes or until fish flakes with a fork.

  • ½ (16-oz) pkg whole wheat orzo
  • 1 small zucchini, chopped
  • 1 Tbsp olive oil
  • 1 organic tomato, chopped
  • ¼ cup crumbled feta cheese
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions; drain and keep warm.
  2. Meanwhile, sauté zucchini in hot oil in a large skillet over medium heat 5 minutes or until tender. Remove from heat; stir in tomato, cooked orzo, cheese, salt, and pepper.
