Chicken with Pasta and Spinach

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 2 Tbsp butter
  • ½ cup chopped onion
  • 1 tsp minced garlic
  • 1 cup small shell pasta
  • 1½ cups chicken broth
  • 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 1 cup grape tomatoes
  • ⅓ cup shredded Parmesan cheese

Instructions

  1. Cut chicken into 2-inch pieces; season lightly with salt and pepper.
  2. Melt butter in a large skillet over medium heat; add chicken, onion, and garlic, and cook, stirring occasionally, until chicken is done. Add pasta; cook, stirring occasionally, 2 minutes or until toasted.
  3. Stir in broth and spinach; top with tomatoes. Bring to a boil; cover, reduce heat, and simmer 12 minutes or until liquid is absorbed.
  4. Stir in cheese, and season with salt and pepper to taste.

  • ½ (16-oz) pkg frozen garlic bread

Side Dish Instructions

  1. Bake bread according to package directions.
