Smothered Cowboy Potatoes
Ingredients
- ½ (32-oz) pkg frozen deli-style seasoned potato wedges
- ¾ lb ground beef
- ½ cup chopped onion
- 1 (10-oz) can enchilada sauce
- 1 cup shredded Mexican-blend cheese
- ¼ cup sour cream
- ⅓ cup chipotle salsa
Instructions
- Bake potato wedges according to package directions.
- Meanwhile, cook beef and onions in a skillet over medium heat until beef is browned and crumbly; drain, and return to skillet. Stir in sauce; cook 2 to 3 minutes or until thoroughly heated.
- Increase oven temperature to broil. Spoon beef mixture over potatoes; sprinkle with cheese. Broil 1 to 2 minutes or until cheese is melted.
- Top with sour cream and salsa.
