Smothered Cowboy Potatoes

Ingredients

  • ½ (32-oz) pkg frozen deli-style seasoned potato wedges
  • ¾ lb ground beef
  • ½ cup chopped onion
  • 1 (10-oz) can enchilada sauce
  • 1 cup shredded Mexican-blend cheese
  • ¼ cup sour cream
  • ⅓ cup chipotle salsa

Instructions

  1. Bake potato wedges according to package directions.
  2. Meanwhile, cook beef and onions in a skillet over medium heat until beef is browned and crumbly; drain, and return to skillet. Stir in sauce; cook 2 to 3 minutes or until thoroughly heated.
  3. Increase oven temperature to broil. Spoon beef mixture over potatoes; sprinkle with cheese. Broil 1 to 2 minutes or until cheese is melted.
  4. Top with sour cream and salsa.
