Asian Beef Lettuce Wraps
Glazed PineappleIngredients
- 1 lb lean ground beef
- ½ jalapeño pepper, seeded and minced
- ¼ tsp salt
- ¼ cup ginger-sesame dressing
- 1 Tbsp fresh lime juice
- ½ cup shredded carrots
- ½ cup chopped English cucumber
- ¼ cup chopped fresh cilantro
- 1 head Bibb lettuce, leaves separated
Instructions
- Cook beef, jalapeño, and salt in a large skillet over medium-high heat 10 to 12 minutes or until beef is browned and crumbly.
- Meanwhile, combine dressing and lime juice. Combine half of dressing mixture, carrots, and cucumber; set aside.
- Stir remaining half of dressing into skillet; cook 1 minute. Stir in cilantro.
- Serve beef mixture in lettuce leaves; top with carrot mixture.
Side Dish Ingredients
- 1 Tbsp brown sugar
- 1 Tbsp fresh lime juice
- ½ Tbsp honey
- 1½ cups cubed pineapple
Side Dish Instructions
- Preheat oven to 450°F. Stir together sugar, lime juice, and honey in a bowl. Add pineapple; toss. Spread in a single layer on a foil-lined rimmed baking sheet.
- Bake 10 minutes or until pineapple begins to caramelize.
