Asian Beef Lettuce Wraps

Ingredients

  • 1 lb lean ground beef
  • ½ jalapeño pepper, seeded and minced
  • ¼ tsp salt
  • ¼ cup ginger-sesame dressing
  • 1 Tbsp fresh lime juice
  • ½ cup shredded carrots
  • ½ cup chopped English cucumber
  • ¼ cup chopped fresh cilantro
  • 1 head Bibb lettuce, leaves separated

Instructions

  1. Cook beef, jalapeño, and salt in a large skillet over medium-high heat 10 to 12 minutes or until beef is browned and crumbly.
  2. Meanwhile, combine dressing and lime juice. Combine half of dressing mixture, carrots, and cucumber; set aside.
  3. Stir remaining half of dressing into skillet; cook 1 minute. Stir in cilantro.
  4. Serve beef mixture in lettuce leaves; top with carrot mixture.

Side Dish Ingredients

  • 1 Tbsp brown sugar
  • 1 Tbsp fresh lime juice
  • ½ Tbsp honey
  • 1½ cups cubed pineapple

Side Dish Instructions

  1. Preheat oven to 450°F. Stir together sugar, lime juice, and honey in a bowl. Add pineapple; toss. Spread in a single layer on a foil-lined rimmed baking sheet.
  2. Bake 10 minutes or until pineapple begins to caramelize.
