Moroccan Steak with Oranges and Olives
Caesar Romaine Salad
Ingredients
- ¾ lb flank steak
- 1 orange
- 2 Tbsp olive oil, divided
- 1½ tsp chopped fresh mint
- ½ tsp garlic powder
- ½ tsp salt
- Dash of cayenne pepper
- ⅓ cup pitted kalamata olives
Instructions
- Cut steak across the grain into ¼-inch-thick slices. Peel and section orange over a bowl, reserving ¼ cup juice.
- Combine 1 Tbsp oil, mint, garlic powder, salt, and cayenne pepper in a large bowl; add steak, and toss.
- Cook steak in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
- Add orange sections, orange juice, and olives. Cook 2 to 3 minutes or until most of liquid is evaporated.
Side Dish Ingredients
- 2 Tbsp mayonnaise
- 1 Tbsp fresh lemon juice
- 1½ tsp olive oil
- 1 clove garlic, minced
- 2 Tbsp grated Parmesan cheese
- 1½ romaine lettuce hearts, chopped
Side Dish Instructions
- Whisk together mayonnaise, lemon juice, oil, garlic, and cheese in a bowl. Add lettuce, and toss.
