Moroccan Steak with Oranges and Olives

Ingredients

  • ¾ lb flank steak
  • 1 orange
  • 2 Tbsp olive oil, divided
  • 1½ tsp chopped fresh mint
  • ½ tsp garlic powder
  • ½ tsp salt
  • Dash of cayenne pepper
  • ⅓ cup pitted kalamata olives

Instructions

  1. Cut steak across the grain into ¼-inch-thick slices. Peel and section orange over a bowl, reserving ¼ cup juice.
  2. Combine 1 Tbsp oil, mint, garlic powder, salt, and cayenne pepper in a large bowl; add steak, and toss.
  3. Cook steak in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
  4. Add orange sections, orange juice, and olives. Cook 2 to 3 minutes or until most of liquid is evaporated.

Side Dish Ingredients

  • 2 Tbsp mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1½ tsp olive oil
  • 1 clove garlic, minced
  • 2 Tbsp grated Parmesan cheese
  • 1½ romaine lettuce hearts, chopped

Side Dish Instructions

  1. Whisk together mayonnaise, lemon juice, oil, garlic, and cheese in a bowl. Add lettuce, and toss.
