Greek Shrimp Salad

Ingredients
- 1 lb unpeeled, medium-size raw shrimp, peeled and deveined
- ¼ cup olive oil dressing, divided
- 1 romaine lettuce heart, shredded
- 1 cup grape tomatoes, halved
- ½ cup pitted kalamata olives
- ½ cup sliced red onion
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ cup crumbled feta cheese
Instructions
- Toss shrimp with 1½ Tbsp dressing; let stand 10 minutes.
- Sauté shrimp in a lightly greased nonstick skillet 5 minutes or just until shrimp turn pink.
- Place lettuce, tomatoes, olives, onion, and shrimp in a bowl. Season with salt and pepper. Toss with 2½ Tbsp dressing. Sprinkle with cheese.
