Greek Shrimp Salad

Ingredients

  • 1 lb unpeeled, medium-size raw shrimp, peeled and deveined
  • ¼ cup olive oil dressing, divided
  • 1 romaine lettuce heart, shredded
  • 1 cup grape tomatoes, halved
  • ½ cup pitted kalamata olives
  • ½ cup sliced red onion
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ cup crumbled feta cheese

Instructions

  1. Toss shrimp with 1½ Tbsp dressing; let stand 10 minutes.
  2. Sauté shrimp in a lightly greased nonstick skillet 5 minutes or just until shrimp turn pink.
  3. Place lettuce, tomatoes, olives, onion, and shrimp in a bowl. Season with salt and pepper. Toss with 2½ Tbsp dressing. Sprinkle with cheese.
