Chili-Lime Flank Steak

Ingredients

  • 2 Tbsp lime juice
  • 1 Tbsp chopped fresh cilantro
  • 1 tsp honey
  • ½ tsp chipotle chili powder
  • 1 clove garlic, minced
  • 1 lb flank steak, trimmed
  • ⅛ tsp salt

Instructions

  1. Combine lime juice, cilantro, honey, chipotle chili powder, and garlic in a large zip-top plastic freezer bag; add steak. Seal and chill 4 hours or overnight.
  2. Preheat broiler. Remove steak from marinade; discard marinade. Sprinkle steak with salt. Place steak on a lightly greased rack in a broiler pan.
  3. Broil 5 minutes per side or to desired doneness. Let stand 5 minutes before slicing thinly across the grain.

  • ½ (16-oz) container cored pineapple, chopped
  • 1 red bell pepper, chopped
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice

  1. Toss together all ingredients in a bowl.
