Southwestern Chicken Wraps

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into 1-inch strips
  • 1½ Tbsp Southwest seasoning, divided
  • 2 Tbsp olive oil, divided
  • 1 small zucchini, chopped
  • ½ cup chopped bell pepper
  • ½ cup chopped onion
  • ½ (10-oz) pkg angel hair coleslaw
  • 2 green onions, sliced
  • 1 Tbsp apple cider vinegar
  • ½ tsp honey
  • ¼ tsp salt
  • 1 head Boston lettuce, separated into leaves
  • 1 jalapeño pepper, seeded and sliced

Instructions

  1. Toss together chicken and 1 Tbsp seasoning blend to coat. Cook in ½ Tbsp hot oil in a large nonstick skillet over medium heat 6 to 8 minutes or until done, stirring occasionally. Remove from skillet.
  2. Cook zucchini, bell pepper, and chopped onion in ½ Tbsp hot oil in skillet, stirring occasionally, 6 minutes or until crisp-tender. Stir in 1½ tsp seasoning blend. Return chicken to skillet, and cook 2 minutes or until thoroughly heated.
  3. Toss together coleslaw, green onions, 1 Tbsp oil, vinegar, honey, and salt.
  4. Serve chicken mixture in lettuce leaves with coleslaw and jalapeño.
