Ultimate Vegan Chili Cheese Fry Nachos
Ingredients
- ½ (20-oz) pkg frozen sweet potato waffle fries
- 1 (15-oz) can vegetarian chili (such as Amy's)
- 1 cup vegan shredded Cheddar cheese
- ½ (16-oz) container fresh salsa
- ½ (16-oz) container guacamole
- ¼ cup sliced pickled jalapeño peppers
- ¼ cup matchstick-cut radishes
- 3 Tbsp chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Bake fries according to package directions. Meanwhile, heat chili according to package directions.
- Mound fries in center of baking sheet. Top with chili and cheese. Return to oven, and bake 5 to 8 minutes longer or until cheese is melted.
- Top nachos with salsa, guacamole, jalapeños, radishes, and cilantro. Serve with lime wedges.
