Ultimate Vegan Chili Cheese Fry Nachos

Ingredients

  • ½ (20-oz) pkg frozen sweet potato waffle fries
  • 1 (15-oz) can vegetarian chili (such as Amy's) 
  • 1 cup vegan shredded Cheddar cheese
  • ½ (16-oz) container fresh salsa
  • ½ (16-oz) container guacamole
  • ¼ cup sliced pickled jalapeño peppers
  • ¼ cup matchstick-cut radishes
  • 3 Tbsp chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Bake fries according to package directions. Meanwhile, heat chili according to package directions.
  2. Mound fries in center of baking sheet. Top with chili and cheese. Return to oven, and bake 5 to 8 minutes longer or until cheese is melted.
  3. Top nachos with salsa, guacamole, jalapeños, radishes, and cilantro. Serve with lime wedges.
