Cuban Citrus Chicken Thighs
Grilled Squash, Onions, and Tomatoes
Ingredients
- ½ cup fresh orange juice
- ½ cup fresh lime juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- ½ tsp dried oregano
- ⅛ tsp cayenne pepper
- 2 lb bone-in, skinless chicken thighs
- ¼ tsp salt
Instructions
- Combine orange juice, lime juice, garlic, cumin, oregano, and cayenne pepper in a shallow bowl or zip-top plastic freezer bag; add chicken. Cover or seal, and let stand 30 minutes.
- Preheat grill to medium heat. Remove chicken from marinade; discard marinade. Season chicken with salt.
- Grill chicken on a grill rack rubbed with olive oil, covered, 30 to 35 minutes or until done, turning occasionally.
Side Dish Ingredients
- 3 large yellow squash, cut in half lengthwise
- 1 large red onion, cut into thick slices
- ¼ cup extra-virgin olive oil
- ½ tsp kosher salt
- ½ tsp pepper
- 1 pint grape tomatoes, halved
Side Dish Instructions
- Preheat grill to medium-high heat. Brush both sides of squash and onion with oil; sprinkle with salt and pepper. Place squash and onion in a grill basket.
- Grill, covered with grill lid, 3 to 4 minutes per side or just until tender and grill marks appear; add tomatoes during the last minute of grilling.
