Cuban Citrus Chicken Thighs

Ingredients

  • ½ cup fresh orange juice
  • ½ cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ⅛ tsp cayenne pepper
  • 2 lb bone-in, skinless chicken thighs
  • ¼ tsp salt

Instructions

  1. Combine orange juice, lime juice, garlic, cumin, oregano, and cayenne pepper in a shallow bowl or zip-top plastic freezer bag; add chicken. Cover or seal, and let stand 30 minutes.
  2. Preheat grill to medium heat. Remove chicken from marinade; discard marinade. Season chicken with salt.
  3. Grill chicken on a grill rack rubbed with olive oil, covered, 30 to 35 minutes or until done, turning occasionally.

Side Dish Ingredients

  • 3 large yellow squash, cut in half lengthwise
  • 1 large red onion, cut into thick slices
  • ¼ cup extra-virgin olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 pint grape tomatoes, halved

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush both sides of squash and onion with oil; sprinkle with salt and pepper. Place squash and onion in a grill basket.
  2. Grill, covered with grill lid, 3 to 4 minutes per side or just until tender and grill marks appear; add tomatoes during the last minute of grilling.
