Sheet Pan Creole Shrimp and Sausage
Mixed Greens with Lemon Vinaigrette
Ingredients
- 1 small onion, thinly sliced
- 1 small red bell pepper, cut into strips
- 1 small yellow bell pepper, cut into strips
- 1 (14-oz) pkg kielbasa sausage, sliced
- ¼ cup olive oil, divided
- 1 Tbsp Creole seasoning, divided
- 1 lb peeled and deveined, large raw shrimp
- 1 pint grape tomatoes, cut in half
- ⅛ tsp salt
- ¼ cup chopped fresh parsley
Instructions
- Preheat oven 425°F. Toss together onion, bell peppers, kielbasa, 2 Tbsp oil, and 2 tsp seasoning on a large rimmed baking sheet; spread in a single layer.
- Bake 8 minutes. Meanwhile, combine shrimp, tomatoes, 2 Tbsp oil, 1 tsp seasoning, and salt.
- Stir shrimp mixture into bell pepper mixture. Bake 8 to 10 minutes or until shrimp turn pink. Season with pepper to taste. Sprinkle with parsley.

- 3 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- 1 (11-oz) pkg mixed baby greens
Side Dish Instructions
- Whisk together oil, lemon juice, salt, and pepper in a bowl; add mixed greens, and toss.
