Bacon-Wrapped Barbecue Chicken Sandwiches

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp Montreal steak seasoning
  • 1 (16-oz) pkg bacon
  • 1 (18-oz) bottle barbecue sauce, divided
  • 1 (8-oz) pkg sliced Monterey Jack cheese
  • 6 hamburger buns, split and toasted

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with seasoning. Wrap each piece of chicken with 2 slices bacon.
  2. Cook chicken in a large skillet over medium-high heat 2 to 3 minutes per side or until bacon begins to brown. Transfer chicken to a foil-lined rimmed baking sheet, and bake 10 minutes. Brush with ¾ cup barbecue sauce, and bake 5 minutes longer or until chicken is done and bacon is crisp. Top with cheese, and let stand until melted.
  3. Spread desired amount of barbecue sauce on buns. Serve chicken on buns with Green Apple Coleslaw recipe.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • ¼ cup chopped fresh parsley
  • 2 Granny Smith apples, cut into matchsticks
  • 3 Tbsp olive oil
  • 3 Tbsp white wine vinegar
  • 2 Tbsp honey
  • 1 (32-oz) pkg frozen French fries

Side Dish Instructions

  1. Toss together coleslaw, parsley, apples, oil, vinegar, and honey in a large bowl; season with salt and pepper to taste.
  2. Bake fries according to package directions. Season with salt and pepper to taste.
