Korean Beef Tacos

Ingredients

  • 1½ lb lean ground beef
  • 2 (7-oz) pouches Korean stir-fry simmer sauce (such as Saffron Road)
  • 12 fajita-size flour tortillas
  • ½ cup kimchi
  • ¼ cup roasted, salted peanuts, coarsely chopped
  • ¼ cup chopped fresh cilantro
  • 3 Tbsp Sriracha mayonnaise
  • 1 lime, cut into wedges

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Add simmer sauce; cook 3 to 4 minutes or until thoroughly heated.
  2. Meanwhile, heat tortillas according to package directions.
  3. Fill tortillas with beef and kimchi. Sprinkle with nuts and cilantro. Serve with mayonnaise and lime wedges.

  • 1 Tbsp fresh lime juice
  • 1 Tbsp honey
  • 1 (16-oz) container pineapple chunks
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Whisk together lime juice and honey in a bowl. Add pineapple, and toss. Sprinkle with cilantro.
