Jalapeño Cheddar Skillet Meatloaf

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • ½ cup almond flour
  • 2 jalapeños, minced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp pepper
  • 1½ cups shredded Cheddar cheese, divided

Instructions

  1. Preheat the oven to 375°F. In a large bowl, combine the ground meat, almond flour, jalapeños, garlic, cumin, salt, pepper, and ¾ cup of the shredded cheese.
  2. Use your hands to mix well together. Spread the mixture evenly in a 10-inch oven-proof skillet (cast iron is best).
  3. Sprinkle the top with the remaining shredded cheese.
  4. Bake 25 to 30 minutes, until the loaf is firm and the center reaches 160°F on an instant-read thermometer. Remove and let cool a few minutes before slicing.
  5. Serving with toppings like sour cream, chopped cilantro, and guacamole.
