Jalapeño Cheddar Skillet Meatloaf
Ingredients
- 1 lb ground beef
- 1 lb ground pork
- ½ cup almond flour
- 2 jalapeños, minced
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp salt
- ½ tsp pepper
- 1½ cups shredded Cheddar cheese, divided
Instructions
- Preheat the oven to 375°F. In a large bowl, combine the ground meat, almond flour, jalapeños, garlic, cumin, salt, pepper, and ¾ cup of the shredded cheese.
- Use your hands to mix well together. Spread the mixture evenly in a 10-inch oven-proof skillet (cast iron is best).
- Sprinkle the top with the remaining shredded cheese.
- Bake 25 to 30 minutes, until the loaf is firm and the center reaches 160°F on an instant-read thermometer. Remove and let cool a few minutes before slicing.
- Serving with toppings like sour cream, chopped cilantro, and guacamole.
