Toasts with Egg, Smoked Salmon and Avocado
Ingredients
- 4 large eggs, lightly beaten
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- 4 (1-oz) slices whole wheat sandwich bread, toasted
- 1 avocado, pitted and sliced
- 1 (4-oz) pkg sliced smoked salmon
- 1 Tbsp finely chopped green onion
- Lemon wedges (optional)
Instructions
- Whisk together eggs, salt and pepper. Cook in hot oil in a large skillet over medium heat, without stirring, until eggs begin to set. Cook, stirring constantly, until thickened and set.
- Top bread with avocado, eggs and salmon. Sprinkle with green onion. Serve with lemon wedges, if desired.
