Honey-Turmeric Chicken Salad
Multigrain Crackers
Ingredients
- ½ cup mayonnaise
- 2 Tbsp fresh lemon juice
- 1 Tbsp honey
- 1 tsp ground turmeric
- ½ tsp salt
- ½ tsp pepper
- 2 cups coarsely chopped rotisserie chicken
- 2 Honeycrisp apples, diced
- ½ cup thinly sliced red onion
- 2 (5-oz) pkg baby kale-spinach mix
Instructions
- Whisk together mayonnaise, lemon juice, honey, turmeric, salt, and pepper in a large bowl. Add chicken, apples, and onion; toss.
- Serve over kale-spinach mix.
