Avocado Topped with Tomato, Bacon and Fried Eggs
Ingredients
- 6 slices center-cut bacon
- 2 Roma tomatoes, chopped
- 1 Tbsp chopped fresh basil
- 1 Tbsp olive oil
- 1 tsp fresh lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- 8 large eggs
- 1 avocado, pitted and sliced
Instructions
- Cook bacon in a large nonstick skillet over medium heat 6 minutes or until crisp. Drain, reserving ½ Tbsp drippings in skillet. Crumble bacon.
- Meanwhile, toss together tomato, basil, oil, lemon juice, salt, and pepper.
- Crack 4 eggs into hot drippings in skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness. Repeat with remaining 4 eggs.
- Divide avocado among 4 serving plates; top with eggs, tomato mixture, and bacon.
