Turkey, Strawberry and Brie Sandwiches
Tomato-and-Cucumber Salad with BasilIngredients
- 1 (8-oz) round Brie, at room temperature
- ¼ cup fig preserves
- 3 Tbsp Dijon mustard
- 12 thick slices sourdough bread
- 2 lb thin deli-sliced roasted turkey
- 1 quart strawberries, sliced
- 18 large fresh basil leaves
- 6 Tbsp butter, melted
Instructions
- Preheat grill to medium-high heat. Cut Brie into thin slices.
- Stir together preserves and mustard, and spread over 1 side of each bread slice. Top 6 slices with turkey, cheese, strawberries, basil, and remaining bread, preserves sides down.
- Brush outsides of sandwiches with butter.
- Grill sandwiches, without grill lid, until toasted and cheese is melted.
Side Dish Ingredients
- 1 pint grape tomatoes, halved
- 1 English cucumber, chopped
- 3 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1 clove garlic, minced
- 3 Tbsp chopped fresh basil
Side Dish Instructions
- Toss together tomatoes, cucumber, oil, lemon juice, garlic, and salt and pepper to taste; let stand 10 minutes.
- Sprinkle with basil; toss.
