Turkey, Strawberry and Brie Sandwiches

Ingredients

  • 1 (8-oz) round Brie, at room temperature
  • ¼ cup fig preserves
  • 3 Tbsp Dijon mustard
  • 12 thick slices sourdough bread
  • 2 lb thin deli-sliced roasted turkey
  • 1 quart strawberries, sliced
  • 18 large fresh basil leaves
  • 6 Tbsp butter, melted

Instructions

  1. Preheat grill to medium-high heat. Cut Brie into thin slices.
  2. Stir together preserves and mustard, and spread over 1 side of each bread slice. Top 6 slices with turkey, cheese, strawberries, basil, and remaining bread, preserves sides down.
  3. Brush outsides of sandwiches with butter.
  4. Grill sandwiches, without grill lid, until toasted and cheese is melted.

Side Dish Ingredients

  • 1 pint grape tomatoes, halved
  • 1 English cucumber, chopped
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 3 Tbsp chopped fresh basil

Side Dish Instructions

  1. Toss together tomatoes, cucumber, oil, lemon juice, garlic, and salt and pepper to taste; let stand 10 minutes.
  2. Sprinkle with basil; toss.
