Korean Pork Lettuce Wraps
Ingredients
- ¼ cup miso
- ¼ cup soy sauce
- 3 Tbsp gochujang pepper paste or Sriracha, plus more for serving
- 1 Tbsp toasted sesame oil
- Black pepper
- 4 lb boneless pork shoulder, well trimmed and cut into 6 pieces
- Lettuce leaves, thinly sliced radishes, cucumbers, scallions, and lime wedges, for serving
Instructions
- In slow-cooker bowl, whisk together miso, soy sauce, gochujang, sesame oil and 1 tsp. pepper. Add pork and turn to coat with soy mixture. Cover and cook on High 6 to 7 hrs. or on Low 8 to 10 hrs. until pork is tender.
- Shred pork and stir back into the cooking liquid. Serve with lettuce leaves, radishes, cucumbers, scallions and additional gochujang.
