Ingredients

  • 3 Tbsp fresh lime juice
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fish sauce
  • 2 cloves garlic, minced
  • 2 tsp honey
  • ½ tsp ground ginger
  • 3 cups thinly sliced cabbage
  • 1 red bell pepper, chopped
  • 3 carrots, grated
  • 4 green onions, sliced
  • ⅓ cup dry-roasted peanuts
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh basil
  • 1½ cups shredded rotisserie chicken (without skin)

Instructions

  1. Whisk together first 6 ingredients.
  2. Combine cabbage and remaining ingredients. Drizzle with dressing; toss.

  • 1 (12-oz) container cubed pineapple
  • 1 (4.4-oz) pkg blueberries

Side Dish Instructions

  1. Toss together pineapple and blueberries in a large bowl.
