Sweet and Sour Chicken I
Broccoli with Garlic Butter and Cashews
Ingredients
- ¾ cup water, divided
- ¼ cup and 2 Tbsp white sugar
- ¼ cup distilled white vinegar
- ½ (8-oz) can pineapple chunks, drained and juice reserved
- 1 drop orange food color
- 2 Tbsp cornstarch
- 1 cup and 2 Tbsp self-rising flour
- 1 Tbsp vegetable oil
- 1 Tbsp cornstarch
- ¼ tsp salt
- ⅛ tsp ground white pepper
- 1 egg
- ¾ cup water
- 4 boneless, skinless chicken breast halves, cut into 1 inch cubes
- 2 cups vegetable oil for frying
- 1 green bell pepper, cut into 1-inch pieces
Instructions
- In a saucepan, combine ½ cup and 2 Tbsp water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 2 Tbsp cornstarch and ¼ cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
- Combine flour, 1 Tbsp oil, 1 Tbsp cornstarch, salt, white pepper, and egg. Add ¾ cup water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces and stir until chicken is well coated.
- Heat oil in skillet or wok to 360°F. Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken and drain on paper towels.
- When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.
Side Dish Ingredients
- 1 lb fresh broccoli, cut into bite size pieces
- 3 Tbsp and 1¾ tsp butter
- 2 tsp brown sugar
- 2 Tbsp soy sauce
- 1¼ tsp white vinegar
- ⅛ tsp ground black pepper
- 1¼ cloves garlic, minced
- 3 Tbsp and 1¾ tsp chopped salted cashews
Side Dish Instructions
- Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
- While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews and pour the sauce over the broccoli. Serve immediately.
