Sweet and Sour Chicken I

Ingredients

  • ¾ cup water, divided
  • ¼ cup and 2 Tbsp white sugar
  • ¼ cup distilled white vinegar
  • ½ (8-oz) can pineapple chunks, drained and juice reserved
  • 1 drop orange food color
  • 2 Tbsp cornstarch
  • 1 cup and 2 Tbsp self-rising flour
  • 1 Tbsp vegetable oil
  • 1 Tbsp cornstarch
  • ¼ tsp salt
  • ⅛ tsp ground white pepper
  • 1 egg
  • ¾ cup water
  • 4 boneless, skinless chicken breast halves, cut into 1 inch cubes
  • 2 cups vegetable oil for frying
  • 1 green bell pepper, cut into 1-inch pieces

Instructions

  1. In a saucepan, combine ½ cup and 2 Tbsp water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 2 Tbsp cornstarch and ¼ cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
  2. Combine flour, 1 Tbsp oil, 1 Tbsp cornstarch, salt, white pepper, and egg. Add ¾ cup water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces and stir until chicken is well coated.
  3. Heat oil in skillet or wok to 360°F. Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken and drain on paper towels.
  4. When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

Side Dish Ingredients

  • 1 lb fresh broccoli, cut into bite size pieces
  • 3 Tbsp and 1¾ tsp butter
  • 2 tsp brown sugar
  • 2 Tbsp soy sauce
  • 1¼ tsp white vinegar
  • ⅛ tsp ground black pepper
  • 1¼ cloves garlic, minced
  • 3 Tbsp and 1¾ tsp chopped salted cashews

Side Dish Instructions

  1. Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
  2. While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews and pour the sauce over the broccoli. Serve immediately.
