Ingredients

  • 4 slices bacon
  • 8 large eggs
  • 1 tsp salt
  • ½ tsp pepper
  • 1 (5-oz) pkg baby spinach
  • 2 tomatoes, chopped
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp red wine vinegar

Instructions

  1. Preheat broiler. Cook bacon in a 10-inch ovenproof skillet over medium-high heat 6 to 8 minutes or until crisp. Drain, reserving drippings in skillet. Crumble bacon.
  2. Reduce heat to medium. Whisk together eggs, salt, and pepper. Add eggs to skillet; stir quickly.
  3. Cook, without stirring, until eggs begin to set. Sprinkle with bacon. Transfer to oven; broil 3 to 4 minutes or until top is golden and eggs are firm.
  4. Combine spinach, tomatoes, oil, vinegar, and salt and pepper to taste; toss.
  5. Top frittata with spinach salad before serving.
